This 2 ingredient yogurt cheesecake is a quick, no bake dessert made with Greek yogurt and soft cookies. After chilling, it turns thick, creamy, and cheesecake-like with minimal effort.
Ingredients
1 cup full-fat vanilla Greek yogurt
4 soft cookies or biscuits
Instructions
1. Place yogurt in a container or keep it in its original container
2. Insert cookies vertically into the yogurt so they are partially submerged
3. Cover and refrigerate for at least 5 hours or overnight
4. Allow cookies to soften and mixture to thicken into a cheesecake-like texture
5. Serve chilled and add optional toppings if desired

Use thick full-fat Greek yogurt or skyr for best texture
Let it chill long enough for cookies to fully soften
You can press cookies directly into the yogurt container to save cleanup
Use any cookies that soften well
Store covered in fridge up to 3 days
