Description
3 Ingredient Strawberry Yogurt Bites are a quick frozen snack made with creamy yogurt, fresh strawberries, and crunchy granola. These mini parfait-style bites are perfect for meal prep, light breakfasts, or a refreshing afternoon treat.
Ingredients
1 cup vanilla yogurt or yogurt of choice
½ cup fresh strawberries, hulled and diced
¾ cup fresh strawberries, sliced or chopped for topping
½ cup granola plus extra for topping
¼ cup granola for topping
Instructions
1. Line a 12 cup muffin pan with paper liners or use a silicone muffin pan.
2. Place about 2 teaspoons of granola in the bottom of each cup to create a base layer.
3. In a bowl combine yogurt and diced strawberries, mashing the berries into the yogurt with a fork or pastry cutter until mostly blended with small fruit pieces remaining.
4. Stir the mixture until evenly combined to form strawberry yogurt.
5. Spoon about 2 tablespoons of the yogurt mixture into each muffin cup over the granola and spread into an even layer.
6. Press about 1 tablespoon of sliced strawberries or one strawberry slice onto the top of each portion.
7. Sprinkle about 1 teaspoon granola over the fruit topping if desired.
8. Freeze the tray until the bites are firm, about 2 to 4 hours.
9. Remove from the pan, allow to soften for a few minutes if needed, then serve.
Notes
Store frozen yogurt bites in an airtight freezer safe container for up to 1 to 2 months.
Allow the bites to sit at room temperature for a few minutes before eating so they soften slightly.
Fresh strawberries are recommended because they mash easily and give better texture than frozen berries.
Any preferred yogurt or granola can be used including store bought or homemade varieties.
Break large granola clusters into smaller pieces so they layer evenly in the cups.
Granola topping is optional if a softer texture is preferred.
