Ingredients
3 cups grated zucchini (approx. 15 oz)
3 tablespoons all-purpose flour
1 egg
½ medium onion, chopped
Instructions
1. Grate zucchini using a large-hole grater.
2. Mix with 1 tsp salt and let sit 20 minutes.
3. Drain and squeeze out excess moisture.
4. Chop onion and combine with flour, egg, and zucchini in a bowl.
5. Optionally add herbs or spices (e.g., dill, garlic, cayenne).
6. Heat oil in pan, spoon mixture into fritters.
7. Cook covered on low for 5–7 minutes until golden, flip and cook other side uncovered.
8. Serve warm or cold with sauces like cheese sauce, tzatziki, or marinara.
Notes
Always squeeze out zucchini moisture for crispy fritters.
Don’t use high heat; cook slowly to avoid burning.
Batter should be moist but not runny.
Baked version: 375°F for 15–20 mins, flip halfway.
Great for kids and budget-friendly.
Zucchini can be swapped with summer squash or carrots.
Flour can be subbed with chickpea or almond flour.
