Ingredients
Scale
- ¾ cup unsalted butter, softened (or vegan butter sticks for vegan sprinkle cookies)
- ¾ cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 tsp vanilla extract
- ½ tsp baking soda
- ½ tsp cream of tartar
- ½ tsp salt
- 2 cups all-purpose flour
- 1 ½ cups patriotic sprinkles (preferably jimmies sprinkles)
Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
- In a large bowl, cream the softened butter and sugar until light and fluffy using a stand mixer or hand mixer.
- Add the whole egg, egg yolk, and vanilla extract. Mix until smooth and creamy.
- In a separate bowl, whisk together the baking soda, cream of tartar, salt, and flour.
- Gradually add the dry ingredients to the wet mixture, beating on low until just combined.
- Gently stir in your red white blue sprinkles using a spatula.
- Scoop dough balls using a 2-tablespoon scoop and space them 2 inches apart on the prepared baking sheet.
- Bake for 9-11 minutes, watching carefully—the bottoms should just begin to turn golden brown.
- Let them cool on the baking sheet to set their soft, chewy centers.
Notes
For extra pizzazz, drizzle with white icing and add more sprinkles to resemble the stars and stripes, or swap sprinkles for any occasion to make these your go-to celebration cookies.
