Description

A moist, cinnamon-spiced quick bread packed with tart apples, brown sugar, and topped with a sweet vanilla glaze.


Ingredients

2 medium baking apples, peeled and chopped

½ cup light brown sugar

2 tsp ground cinnamon (heaping)

1 tsp ground ginger

1 large egg (room temp)

⅓ cup white granulated sugar

¼ cup vegetable oil

¼ cup full-fat sour cream (room temp)

2 tsp vanilla extract

1 cup all-purpose flour

1 tsp baking soda

½ tsp kosher salt

**Glaze:**

1 cup powdered sugar, sifted

1 tsp vanilla extract

3 tbsp milk


Instructions

1. Preheat oven to 350°F. Prepare loaf pan with nonstick spray or cake release.

2. Mix chopped apples, brown sugar, cinnamon, and ginger in a medium bowl; set aside.

3. In a large bowl, whisk egg, granulated sugar, vegetable oil, sour cream, and vanilla until smooth.

4. In another bowl, whisk together flour, baking soda, and salt. Add dry mix to wet ingredients and stir until almost fully combined.

5. Fold in ¾ of the apple mixture into the batter.

6. Pour batter into the loaf pan. Top with remaining apple mixture.

7. Bake 50–55 minutes or until internal temp reaches 200°F or a tester comes out clean.

8. Cool in the pan for at least 30 minutes before transferring to a wire rack.

9. For glaze, whisk powdered sugar, vanilla, and milk to smooth consistency.

10. Drizzle glaze over cooled bread before serving.

Notes

Use tart baking apples like Granny Smith, Honeycrisp, or Pink Lady.

A thermometer helps check doneness—look for 200°F in the center.

Store wrapped on the counter for 2 days, fridge for 1 week, or freeze for 3 months.

Can be made in a bundt pan or mini loaves. Adjust baking time accordingly.
