Ingredients
8 oz cream cheese (softened)
2 cups semisweet chocolate chips
2 cups powdered sugar
1/4 cup chopped Andes mints
1 tsp peppermint essence
1 package chocolate melting wafers (for coating)
1 cup white chocolate melting wafers (colored green, optional garnish)
1/2 cup chopped Andes mints (optional garnish)
Instructions
1. Beat softened cream cheese with powdered sugar and peppermint essence until smooth.
2. Melt chocolate chips with chopped Andes mints in the microwave at 50% power, stirring every 30 seconds until fully melted and smooth.
3. Combine melted chocolate with the cream cheese mixture and mix until fully incorporated.
4. Wrap the mixture in plastic wrap, shape into a log, and refrigerate for 45 minutes until firm.
5. After chilling, shape mixture into 1-inch balls and place on parchment-lined tray.
6. Melt chocolate melting wafers using 30-second bursts at 50% power, keeping the chocolate warm over steaming water.
7. Dip each truffle ball into melted chocolate, fully coating it, and remove excess before placing on tray.
8. Optionally, garnish immediately with chopped Andes mints or drizzle with melted green-colored white chocolate after all truffles are dipped.
9. Let truffles set completely before serving.
Notes
Cream cheese can be replaced with mascarpone for richer flavor or with refrigerated solid coconut cream for a dairy-free version.
Semisweet chocolate can be substituted with dark or milk chocolate chips depending on sweetness preference.
Andes mints can be swapped for other mint chocolates; reduce extract if using mint-flavored candies.
For a non-mint version, add nuts or dried fruit instead of Andes mints.
