Description
Moist, fluffy apple cinnamon muffins filled with juicy apple pieces and warm spice, topped with a sweet oat crumb. Perfect for breakfast, snacks, or dessert — and freezer-friendly.
Ingredients
1 3/4 cups all-purpose flour or whole wheat flour
2 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1/2 tsp kosher salt
1/2 cup unsalted butter, softened
1/2 cup dark brown sugar
3 tbsp granulated sugar
2 large eggs, room temperature
2 tsp vanilla extract
1/2 cup sour cream or plain Greek yogurt (dairy-free optional)
1/4 cup milk (dairy-free optional)
2 medium apples, peeled, cored, diced
Crumb topping (optional):
3 tbsp melted unsalted butter
1/4 cup dark brown sugar
1 tsp cinnamon
Pinch sea salt
1/3 cup rolled oats
Instructions
1. Preheat oven to 425°F. Line and lightly grease a 12-cup muffin tin.
2. Mix flour, baking powder, baking soda, cinnamon, and salt in a bowl.
3. In another bowl, cream butter with both sugars until fluffy.
4. Whisk in eggs, vanilla, yogurt or sour cream, and milk until smooth.
5. Combine wet and dry mixtures until just combined, then fold in apples.
6. Fill muffin cups to the top.
7. Mix crumb topping ingredients and sprinkle evenly over muffins.
8. Bake at 425°F for 5 minutes, then reduce to 375°F and bake about 15 minutes more.
9. Cool 5–10 minutes before serving or moving to a rack.
Notes
Gluten-free flour can be substituted 1:1 with a suitable brand.
Any baking apple works: Honeycrisp, Gala, Jonagold, Braeburn, Rome, or Granny Smith for tartness.
Crumb topping adds texture but is optional.
