- 1.5 lbs zucchini (about 3 medium), cut into sticks
- 1/2 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tsp Italian seasoning
- Sea salt & black pepper, to taste
- 2 tbsp olive oil or non-stick spray
- 3 tbsp fresh parsley, chopped (for garnish)
- Optional: Almond flour or crushed pork rinds for a crispier texture
Instructions
- Wash and cut zucchini into uniform sticks. Pat them dry with a paper towel.
- In a shallow bowl, mix Parmesan, garlic powder, smoked paprika, Italian seasoning, sea salt, and black pepper. For keto version, replace half the Parmesan with crushed pork rinds or almond flour.
- Lightly drizzle or spray the zucchini sticks with olive oil. Toss each stick in the cheesy seasoning mix, pressing gently to coat.
- Place the fries on a parchment-lined baking sheet. Bake at 400°F for 15 minutes.
- Broil for 2–3 minutes until golden and crispy.
- Sprinkle with chopped parsley and serve warm with marinara or preferred dipping sauce.
Notes
Drying the zucchini thoroughly is key to preventing sogginess. Use a wire rack for extra crispiness and avoid overcrowding the baking sheet. For a spicier version, add cayenne or chipotle powder.
