These Banana Pudding Cheesecake Bars are a nostalgic Southern twist featuring creamy banana cheesecake, layered with banana pudding and whipped topping on a buttery graham cracker crust.

- 1½ cups graham cracker crumbs
- ½ cup melted butter
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 2 ripe bananas, mashed
- 1 (3.4 oz) box banana pudding mix
- 2 cups whipped cream or whipped topping
- Banana slices, for garnish
Instructions
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs and melted butter until combined.
- Press firmly into your parchment-lined baking dish.
- Bake for 10 minutes, then cool slightly.
- Beat softened cream cheese and sugar until smooth.
- Add eggs one at a time, mixing just until incorporated.
- Mix in vanilla and mashed bananas.
- Pour over the cooled crust and spread evenly.
- Bake at 350°F for 30–35 minutes, or until the center is just set.
- Let cool at room temp for 30 minutes, then chill in the fridge for at least 4 hours.
- Prepare pudding according to box instructions.
- Spread pudding evenly over the chilled cheesecake layer.
- Top with whipped cream and banana slices.
- Use a sharp knife or pizza cutter to cut into squares.
- Clean the knife between slices for neat presentation.
Notes
Always soften cream cheese before using. Don’t overmix the batter. Chill for at least 4 hours for best results. Use ripe bananas for extra flavor.
