Ingredients

2 tbsp oil

2 lb beef (cubed)

8 oz mushrooms (chopped)

1 large carrot (chopped)

1 yellow onion (diced)

3 bay leaves

3 garlic cloves (pressed)

4 cups beef broth

1/2 cup pearl barley

1 tbsp salt (adjust to taste)

1 tsp pepper (adjust to taste)


Instructions

1. Preheat pot, brown beef with oil.

2. Add onion, carrot, and mushrooms; sauté until slightly golden.

3. Add salt, pepper, bay leaves, and garlic.

4. Pour in beef broth, simmer covered 45 minutes until beef is tender.

5. Add barley, cook 20 minutes until done.

6. Serve immediately.

Notes

Use affordable beef cuts such as chuck roast, stew meat, oxtail, or leftover steak.

Fattier cuts will add more flavor.

You can substitute pork, lamb, or chicken if preferred.

Add extra vegetables like celery or bell peppers for variety.
