2 pounds beef stew meat cut into 1 inch cubes

1 ½ teaspoons kosher salt

½ teaspoon black pepper

2 tablespoons olive oil

1 large yellow onion chopped

4 garlic cloves minced

2 tablespoons red wine vinegar

1 tablespoon tomato paste

2 tablespoons arrowroot powder or cornstarch or flour

1 cup dry red wine

4 cups low sodium beef broth

½ teaspoon dried thyme

2 bay leaves

1 pound baby potatoes halved or quartered

4 carrots peeled and sliced

3 celery ribs chopped

Optional fresh thyme for garnish


Instructions

1. Pat the beef dry and season with salt and pepper

2. Heat oil in a large pot and sear the beef in batches until browned on all sides then set aside

3. Cook onion and garlic in the same pot then add vinegar to loosen browned bits and cook until softened

4. Stir in tomato paste briefly then return beef to the pot and sprinkle with thickener

5. Pour in wine broth thyme and bay leaves then bring to a boil and reduce heat to simmer for 1 hour

6. Add potatoes carrots and celery then continue simmering for 20 to 30 minutes until tender

7. Remove bay leaves garnish if desired and serve warm

Notes

Brown the meat well to build deep flavor

Do not overcrowd the pot during searing

Red wine adds richness but you can replace it with broth

Use a small amount of thickener since potatoes help thicken naturally
