Description
Fresh Black Bean and Corn Salsa made with black beans, sweet corn, crisp vegetables, cilantro, and lime dressing. This easy no cook salsa is perfect for tortilla chips, tacos, burritos, or Cinco de Mayo gatherings.
Ingredients
1 can black beans, drained and rinsed
1 can corn, drained
1/4 cup diced red onion
1/2 cup diced red bell pepper
2 scallions, chopped
1/4 cup chopped fresh cilantro
2 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
1/2 teaspoon dried oregano
1/2 teaspoon smoked paprika or cumin
Salt to taste
Black pepper to taste
Instructions
1. Add black beans, corn, diced red onion, diced red bell pepper, chopped scallions, and chopped cilantro to a large bowl.
2. In a small bowl whisk together olive oil, lime juice, dried oregano, smoked paprika, salt, and black pepper.
3. Pour the dressing over the bean and vegetable mixture.
4. Stir thoroughly until everything is evenly coated.
5. Taste and adjust seasoning with extra salt, pepper, or lime juice if needed.
6. Let the salsa rest for about 10 minutes so the flavors blend before serving.
Notes
Use fresh lime juice for the best bright flavor.
Avoid adding too much olive oil because the salsa may become watery after sitting.
You can substitute lemon juice if limes are not available.
Adjust spices and seasoning to taste before serving.
