Ingredients
½ cup honey or maple syrup
¼ cup Greek yogurt
¼ cup unsweetened applesauce
¼ cup almond milk or other milk
1 teaspoon vanilla extract
1 cup whole wheat flour or all-purpose or gluten-free flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsweetened cocoa powder
½ cup chopped pitted cherries fresh or frozen
2 cups whipped coconut cream or Greek yogurt for topping
¼ cup shredded dark chocolate
Extra cherries for garnish
Instructions
1. Preheat oven to 175°C and line a muffin tin with paper liners
2. Mix sweetener, yogurt, applesauce, milk, and vanilla until smooth
3. In another bowl combine flour, baking powder, baking soda, and salt
4. Add dry mixture and cocoa powder into wet ingredients and stir gently until just combined
5. Fold in chopped cherries evenly
6. Fill liners about two-thirds full with batter
7. Bake for 18 to 20 minutes until a toothpick inserted comes out clean
8. Cool briefly in the pan, then transfer to a rack to cool completely
9. Whip the cream or yogurt until thick and airy
10. Top cooled cupcakes with whipped cream, cherries, and chocolate
