  • 1 tbsp lemon juice
  • 1 tsp cornstarch
  • 4 (8 oz) packages full-fat cream cheese, room temperature
  • 1 cup sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • Fresh blackberries (optional)
  • Whipped cream (optional)

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Blend blackberries with sugar and lemon juice, then strain and cook with cornstarch to thicken.
  3. Mix graham cracker crumbs, sugar, butter, and cinnamon; press into a 9-inch springform pan and bake for 10 minutes.
  4. Beat cream cheese until smooth, then add sugar and eggs one at a time.
  5. Mix in sour cream and vanilla.
  6. Pour half the batter over the cooled crust, swirl with blackberry puree, then repeat with remaining batter and puree.
  7. Bake for 60-70 minutes until set around the edges.
  8. Cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
  9. Top with fresh blackberries and whipped cream if desired.
