- 1 tsp cornstarch
- 4 (8 oz) packages full-fat cream cheese, room temperature
- 1 cup sugar
- 4 large eggs
- 1 cup sour cream
- 1 tsp vanilla extract
- Fresh blackberries (optional)
- Whipped cream (optional)
Instructions
- Preheat oven to 325°F (163°C).
- Blend blackberries with sugar and lemon juice, then strain and cook with cornstarch to thicken.
- Mix graham cracker crumbs, sugar, butter, and cinnamon; press into a 9-inch springform pan and bake for 10 minutes.
- Beat cream cheese until smooth, then add sugar and eggs one at a time.
- Mix in sour cream and vanilla.
- Pour half the batter over the cooled crust, swirl with blackberry puree, then repeat with remaining batter and puree.
- Bake for 60-70 minutes until set around the edges.
- Cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
- Top with fresh blackberries and whipped cream if desired.
