Description

Blueberry French Toast Casserole is a creamy overnight breakfast bake made with French bread, sweet cream cheese filling, warm spices, and juicy blueberries. It rests overnight so the bread absorbs the custard, then bakes into a soft, custardy center with a lightly golden top. Perfect for weekend brunch or holiday mornings.

8 oz cream cheese, softened

1 cup powdered sugar

2 tablespoons milk

1 tablespoon vanilla extract, divided

2 cups blueberries, divided

2 loaves French bread, cut into cubes (preferably day old)

2 cups milk

8 large eggs

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg


Instructions

1. Combine softened cream cheese, powdered sugar, 2 tablespoons milk, and half of the vanilla extract in a bowl and mix until smooth and creamy. Fold in 1 cup of blueberries.

2. Spread half of the cubed bread evenly in a 10×14 inch baking dish. Layer the cream cheese mixture over the bread, then cover with the remaining bread cubes.

3. Whisk together eggs, 2 cups milk, remaining vanilla extract, cinnamon, and nutmeg until fully blended. Pour the custard mixture evenly over the bread layers so the bread absorbs the liquid. Sprinkle the remaining blueberries over the top.

4. Cover the dish tightly with foil and refrigerate for about 8 hours or overnight so the bread soaks up the custard. Remove from the refrigerator 30 to 60 minutes before baking.

5. Preheat the oven to 375°F (190°C). Bake the casserole covered with foil for 45 minutes. Remove the foil and continue baking for about 30 minutes until the center is set and the top becomes lightly golden.

6. Allow the casserole to cool slightly before slicing and serving.

Notes

Day old or slightly stale bread works best because it absorbs the custard without becoming overly soggy.

Whole milk gives a richer flavor, but other types of milk can also be used.

Allowing the casserole to chill overnight helps the bread fully soak up the custard for better texture.

The cream cheese layer adds a creamy and slightly tangy contrast to the sweet blueberries and custard.
