Description
A hearty, cheesy, and savory Breakfast Grilled Cheese made with chicken sausage, eggs, and melted Colby-Jack cheese between buttery sourdough bread. Perfect for busy mornings, brunch, or meal prep.
Ingredients
½ pound ground chicken breakfast sausage
6 large eggs, beaten
8 slices Colby-Jack cheese
4 tablespoons soft butter, divided
8 slices sourdough bread
Optional: tomato slices, spinach, avocado, or mayonnaise
Instructions
1. Cook chicken sausage in a skillet over medium heat until browned, then transfer to a paper towel-lined bowl.
2. Melt 2 tablespoons of butter in the skillet and add beaten eggs. Scramble gently until just set, then mix with cooked sausage.
3. Butter one side of each bread slice. Place one slice, buttered side down, in a skillet and layer with cheese, sausage-egg mix, another cheese slice, and another slice of bread (buttered side up).
4. Cook over medium heat for 3–4 minutes per side until golden and melted inside.
5. Remove, let rest for one minute, slice, and serve warm.
Notes
Use sturdy bread like sourdough to prevent sogginess.
Mayonnaise can be used instead of butter for extra crispiness.
Sandwiches can be made with just eggs and cheese if preferred.
Optional add-ins include tomato, spinach, or avocado.
To store, let sandwiches cool fully before packing.
Can be frozen in airtight containers or freezer bags.
To reheat, microwave briefly, then crisp on a skillet or panini press.
