A smoky, spicy, and satisfying one-pan dinner that’s ready in just 30 minutes. This Cajun Sausage and Rice Skillet brings together savory sausage, tender rice, and colorful peppers in one easy meal perfect for busy weeknights.
Ingredients
12 oz smoked sausage (andouille or kielbasa), sliced into ½-inch rounds
1 cup long-grain white rice, rinsed
1 red bell pepper, diced
1 green bell pepper, diced
1 medium yellow or white onion, diced
3 cloves garlic, minced
1 ½ cups chicken broth
2 tbsp Cajun seasoning
1 tbsp olive oil
Salt and pepper to taste
Optional: fresh parsley, green onions, hot sauce for garnish
Instructions
1. Slice sausage and vegetables; mince garlic and rinse rice.
2. Heat olive oil in a large skillet over medium heat. Add sausage and cook 5–7 minutes until browned; remove and set aside.
3. Add diced onion and bell peppers to the same skillet and sauté for 3 minutes. Add garlic and cook 1 more minute until fragrant.
4. Stir in rinsed rice and toast for 2 minutes until fragrant.
5. Pour in chicken broth and Cajun seasoning, stir well, and bring to a boil.
6. Reduce heat, cover, and simmer 15–20 minutes until rice is tender and broth is absorbed.
7. Return sausage to the skillet and cook 3–5 minutes more to blend flavors.
8. Serve hot, garnished with parsley, green onions, or hot sauce as desired.
Notes
Rinse rice thoroughly to remove excess starch for fluffier texture.
Avoid over-stirring while rice is cooking to prevent mushiness.
Adjust spice level by reducing Cajun seasoning or using milder sausage; increase heat with cayenne or hot sauce.
Keeps 3–4 days in the fridge in an airtight container; reheat with a splash of broth on stovetop or in microwave.
