Description
California Grilled Chicken is a fresh and flavorful dinner made with juicy grilled chicken marinated in a honey balsamic mixture. Each chicken breast is topped with melted mozzarella, creamy avocado, fresh tomatoes, basil, and a drizzle of balsamic glaze for a bright and satisfying meal.
Ingredients
¾ cup balsamic vinegar
2 tablespoons honey
2 tablespoons extra virgin olive oil
2 teaspoons Italian seasoning
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon ground black pepper
4 boneless skinless chicken breasts
4 slices mozzarella cheese
2 avocados diced
1 pint cherry or grape tomatoes quartered
2 tablespoons sliced fresh basil
Balsamic glaze for drizzling
Instructions
1. Whisk balsamic vinegar, honey, olive oil, Italian seasoning, garlic powder, salt, and pepper in a bowl to create the marinade.
2. Place chicken breasts in a resealable bag or container and pour the marinade over them. Seal and massage to coat evenly, then refrigerate for at least 30 minutes or up to 24 hours.
3. Before grilling, combine diced avocado and quartered tomatoes in a bowl. Season lightly with salt and pepper and keep chilled until ready to serve.
4. Heat a grill to medium high and lightly oil the grates.
5. Grill the marinated chicken for about 6 to 8 minutes per side until fully cooked.
6. Place a slice of mozzarella on each chicken breast, cover the grill, and cook another 1 to 2 minutes until the cheese melts.
7. Transfer the chicken to a serving platter. Top each piece with avocado tomato mixture, sprinkle with fresh basil, and drizzle with balsamic glaze. Serve immediately.
Notes
Chicken can be grilled on an outdoor grill or cooked using a grill pan indoors.
Homemade balsamic glaze can be made by simmering 2 cups balsamic vinegar with ½ cup brown sugar for about 20 minutes until thick enough to coat the back of a spoon.
If ripe avocados are unavailable, chunky guacamole with tomatoes can be used as a topping.
Fresh pico de gallo can replace plain tomatoes for a slightly different flavor.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Keep the grilled chicken separate from the avocado topping for best storage.
Cooked chicken can be frozen for up to 3 months, but avocado topping should not be frozen.
