Description

California Roll Sushi Bowls bring the classic flavors of a California sushi roll into an easy bowl format. Sticky sushi rice is topped with imitation crab, creamy avocado, crisp cucumber, and spicy mayo, then finished with sesame seeds, nori, and furikake. This quick dinner delivers fresh, creamy, tangy, and slightly spicy flavors in about 23 minutes without the need to roll sushi.


Ingredients

1 1/2 cups dry Calrose sushi rice

2 cups water

1/4 cup seasoned rice vinegar

1/4 cup Japanese mayonnaise

2 teaspoons sriracha

8 oz imitation crab meat, chopped into small pieces

1/2 cup diced English cucumber

1–2 nori sheets, chopped or crumbled

1 large avocado, peeled and sliced

Black sesame seeds and toasted sesame seeds for garnish

Nori furikake seasoning

1/4 cup low-sodium soy sauce for serving


Instructions

1. Rinse the sushi rice thoroughly under cold water until the water runs mostly clear.

2. Cook the rice with 2 cups of water in a rice cooker or pot until tender.

3. Transfer the hot rice to a wide tray or sheet pan and gently fold in the seasoned rice vinegar using a rice paddle or spatula.

4. Allow the rice to cool completely.

5. In a small bowl combine Japanese mayonnaise and sriracha to create the spicy mayo sauce.

6. Chop the imitation crab into small pieces and dice the cucumber.

7. Crumble or chop the nori sheets and slice the avocado.

8. Add cooled sushi rice to bowls as the base.

9. Top with chopped crab, diced cucumber, and sliced avocado.

10. Drizzle spicy mayo over the bowls.

11. Sprinkle sesame seeds, nori pieces, and furikake on top.

12. Serve with soy sauce on the side.

Notes

Short-grain Calrose sushi rice works best because it becomes sticky and holds together well.

Fold the vinegar into the rice gently to avoid crushing the grains.

Allow the rice to cool before assembling so the toppings stay fresh.

Spicy mayo is made by combining Japanese mayonnaise with sriracha for a creamy, mildly spicy sauce.

Nori, sesame seeds, and furikake add extra umami flavor and texture.

Imitation crab is traditional for California rolls but real crab can be used if preferred.

The bowl format makes sushi easier to prepare and allows easy customization with extra vegetables or toppings.
