Description
A dessert made with a shortbread crust, thick cheesecake filling, cinnamon-spiced apples, and a brown sugar streusel topping, finished with caramel drizzle.
Ingredients
**Shortbread Crust**
2 cups all-purpose flour
1/2 cup firmly packed brown sugar
1 cup butter, softened
**Cheesecake Filling**
3 (8 oz) packages cream cheese, softened
3/4 cup sugar
3 large eggs
1 1/2 tsp vanilla extract
**Apple Topping**
3 Granny Smith apples, peeled, cored, finely chopped (~3 cups)
2 tbsp sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
**Streusel Topping**
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup quick cooking oats
1/2 cup butter, softened
**Caramel Drizzle**
1/2 cup caramel topping (drizzle after baking)
Instructions
1. Preheat oven to 350°F.
2. In a bowl, mix flour and brown sugar. Cut in butter until crumbly. Press into a greased or parchment-lined 9×13-inch baking dish. Bake for 15 minutes until lightly golden.
3. Beat softened cream cheese and sugar until smooth. Add eggs one at a time. Stir in vanilla. Pour over warm crust.
4. Combine apples with sugar, cinnamon, and nutmeg. Spoon evenly over the cheesecake layer.
5. Mix streusel ingredients with your hands until crumbly. Sprinkle over the apples.
6. Bake for 40–45 minutes or until the center is set. Cool to room temp.
7. Chill in the refrigerator. Drizzle caramel just before serving.
Notes
Store in the fridge for up to 5 days.
Freeze (without caramel) for up to 4 months.
Use parchment to help lift bars cleanly.
Granny Smith apples are ideal, but Honeycrisp or Braeburn work too.
For extra flavor, use homemade caramel.
