Description
Carlota de Limón is a refreshing no bake Mexican dessert made with layers of Maria cookies and creamy lime filling. The sweet and tangy flavor with its chilled texture makes it perfect for Cinco de Mayo celebrations.
Ingredients
1 (12-ounce) can evaporated milk
1 (14-ounce) can sweetened condensed milk
Juice of about 6 fresh limes (about 3/4 cup lime juice)
2 (6-ounce) packages Maria cookies
1 cup cold heavy cream
2 tablespoons granulated sugar
1/2 teaspoon vanilla extract
Optional garnish: lime zest
Optional garnish: lime slices
Optional garnish: berries
Optional garnish: crushed Maria cookies
Instructions
1. Line the bottom and sides of a 6 x 3 inch springform pan with parchment paper.
2. Blend evaporated milk, sweetened condensed milk, and fresh lime juice until smooth.
3. Spread a thin layer of the lime mixture in the prepared pan.
4. Arrange a layer of Maria cookies on top and break cookies if needed to fill gaps.
5. Spread another layer of lime cream over the cookies.
6. Repeat layers of cookies and cream until ingredients are used, finishing with cream.
7. Cover and refrigerate for at least 4 hours or overnight.
8. Whip heavy cream with sugar and vanilla until fluffy.
9. Spread whipped cream on top and garnish with lime zest or berries.
Notes
This is a traditional Mexican no bake dessert similar to an icebox cake.
Fresh lime juice provides the best flavor.
Cookies soften during chilling and create a cake like texture.
Graham crackers or vanilla wafers can replace Maria cookies.
Store covered in the refrigerator for 2 to 3 days.
