Description

Soft and moist Carrot Cake Bars made with warm spices and topped with creamy frosting. Perfect for Easter desserts recipes or an easy spring treat.


Ingredients

3/4 cup avocado oil or mild vegetable oil

1/2 cup granulated sugar

1/2 cup packed brown sugar

3 eggs

1/2 tablespoon vanilla extract

1 2/3 cups all purpose flour

1 1/2 teaspoons ground cinnamon

1 teaspoon baking soda

1 teaspoon fine sea salt

1/2 teaspoon baking powder

1/4 teaspoon ground nutmeg

Pinch of ground cloves

8 ounces finely grated fresh carrots

Optional 1/2 cup chopped nuts

Optional 1/4 cup raisins

8 ounces low fat cream cheese softened

2 tablespoons butter softened

1 teaspoon vanilla extract for frosting

3 cups sifted powdered sugar


Instructions

1. Heat oven to 350°F and grease a 9×9 inch baking pan.

2. Whisk oil, granulated sugar, and brown sugar until smooth.

3. Add eggs and vanilla extract, then mix until combined.

4. In a separate bowl combine flour, cinnamon, baking soda, salt, baking powder, nutmeg, and cloves.

5. Stir dry ingredients into wet ingredients until just combined.

6. Fold in grated carrots and optional nuts or raisins.

7. Spread batter evenly into prepared pan.

8. Bake for 35 to 40 minutes until a toothpick inserted in the center comes out clean.

9. Cool completely before frosting.

10. Beat cream cheese, butter, and vanilla until smooth.

11. Gradually add sifted powdered sugar and mix until desired thickness forms.

12. Spread frosting over cooled bars.

13. Slice into 9 to 12 bars and serve.

Notes

Refrigerate bars in an airtight container for up to three days.

Sift powdered sugar to prevent lumps in frosting.

Adjust frosting thickness by adding more or less powdered sugar.

Finely grate carrots for best texture.

Chill bars before slicing for cleaner cuts.
