No-bake Carrot Cake Cheesecake Bites are creamy, spiced dessert balls made from boxed carrot cake mix, cream cheese, and sweet candy coating. Perfect for Easter parties, gifting, or make-ahead treats!
Ingredients
15.25 oz boxed carrot cake mix
8 oz cream cheese, softened
12 oz white or vanilla candy melts
4 oz orange candy melts for drizzle
Instructions
1. Microwave the dry carrot cake mix in two 30-second intervals, stirring between, then let it cool completely.
2. Beat the softened cream cheese until smooth, then mix in the cooled cake mix until fully combined.
3. Cover and refrigerate the mixture for about 2 hours until firm.
4. Scoop and roll the chilled mixture into 1-tablespoon-sized balls and place them on a parchment-lined baking sheet.
5. Melt the white or vanilla candy melts in the microwave, stirring until smooth. Dip each ball into the coating and let the excess drip off.
6. Place the coated bites back on the baking sheet and drizzle with melted orange candy melts.
7. Refrigerate until the coating is set.

Best served chilled.
