Description
Creamy, cheesy Cheddar Ranch Chicken Thighs baked in the oven with garlic, ranch seasoning, and melted cheddar. This easy low carb dinner takes just 35 minutes and delivers juicy chicken with a rich golden topping.
Ingredients
2 pounds chicken thighs (about 8 thighs)
2 teaspoons minced garlic
1/2 cup mayonnaise
1 cup shredded cheddar cheese
1 packet ranch dressing seasoning mix
Instructions
1. Preheat oven to 400°F (204°C).
2. Lightly grease a baking dish with nonstick spray.
3. In a bowl combine minced garlic, mayonnaise, shredded cheddar cheese, and ranch seasoning until well mixed.
4. Arrange chicken thighs in the baking dish in a single layer.
5. Spread the cheese and ranch mixture evenly over the top of the chicken.
6. Bake for about 30 minutes, or until the chicken is cooked through and the topping is melted and lightly browned.
7. Let the chicken rest for a few minutes before serving.
Notes
Use a deeper baking dish because chicken thighs release a good amount of juices during cooking.
The mayonnaise helps keep the chicken moist while creating a creamy cheesy topping.
This recipe requires minimal prep and goes straight from mixing the topping to baking.
Serve with roasted vegetables, salad, or potatoes for a complete meal.
