Cheese Garlic Rolls – Soft, Buttery, and Irresistibly Cheesy

Description

Soft, fluffy, buttery cheese garlic rolls filled with roasted garlic and melty mozzarella. Perfect for Christmas dinner or any cozy meal.


Ingredients

Scale

1 head garlic

3 tbsp olive oil

Salt (for garlic + dough)

50g (1/4 cup) butter (for garlic butter)

1 tbsp chopped fresh parsley

90g (1/3 cup) warm whole milk

7g (2 1/4 tsp) active dry yeast

1 tbsp honey

200g (1 1/2 cups) all-purpose flour

50g (1/2 cup) bread flour

20g (3 tbsp) milk powder (optional)

25g (2 tbsp) softened butter

2 egg yolks (or 1 whole egg)

1 tbsp sugar

1.5 tsp salt

200g (2 cups) mozzarella cheese (or cheddar, parmesan, etc.)

1 egg (for egg wash)


Instructions

1. Roast garlic at 160°C (320°F) for 2 hours in a ramekin with olive oil and salt, covered with foil.

2. Mix roasted garlic with butter, parsley, and 2 tbsp garlic oil – set aside.

3. Activate yeast by mixing warm milk, yeast, and honey. Let sit 10 minutes until frothy.

4. Mix flours, milk powder, butter, sugar, salt, egg yolks, and yeast mixture.

5. Knead with dough hook for 15–20 minutes until soft and smooth.

6. Proof dough in warm place for 1.5 hours or until doubled.

7. Roll out dough to 1/8 inch, spread garlic butter, sprinkle cheese.

8. Roll dough into a log and cut into 6 pieces.

9. Place on baking tray, proof again 30 mins.

10. Brush with egg wash, bake at 175°C (350°F) for 20–25 mins.

11. Broil optional for 2–3 mins at 190°C (375°F) for golden tops.

12. Brush with garlic butter and sprinkle parsley.

Notes

Store rolls in airtight container in fridge for up to 4 days.

Freeze baked rolls for up to 2 months.

Reheat at 175°C (350°F) for 5–8 mins until warm and soft.

Roast garlic ahead to save time.

Use different herbs like rosemary or thyme for variation.
