Description
Cheesy Mexican casserole is bold, crunchy, creamy, and full of melty cheese. The perfect cozy dinner for weeknights or potlucks.
Ingredients
1 lb ground beef (browned)
1/2 cup chopped onion or 2 tbsp dried onion
1 clove garlic, minced
1 (16 oz) can refried beans
1 (10 oz) can cream of mushroom soup
1 (8 oz) can tomato sauce
1 (4 oz) can green chilies, chopped
1 (9.75 oz) bag Doritos Nacho Cheese Chips
1½ cups Cheddar or Colby cheese, grated
1½ cups Monterrey Jack cheese, grated
1 (10 oz) can tomatoes with green chilies (optional)
Instructions
1. Preheat oven to 350°F (175°C).
2. Brown ground beef, onion, and garlic in a large skillet; drain well.
3. Add refried beans, cream of mushroom soup, tomato sauce, and green chilies; stir and set aside.
4. Grease a 9×13 inch baking dish and layer crushed Doritos chips on the bottom.
5. Spoon half the meat/bean mixture over the chips and sprinkle with both cheeses.
6. Repeat with a second layer of chips, meat mixture, and cheeses.
7. Optionally, top with canned tomatoes with green chilies.
8. Sprinkle final layer of cheese on top.
9. Bake for 40 minutes.
Notes
Can be made ahead and refrigerated; bake 10 extra minutes if chilled.
Cheddar alone is fine if you don’t want mixed cheeses.
Pre-cooked ground beef from the freezer speeds up prep.
Suitable for casual dinners or when hosting guests.
