Ingredients
1½ lbs baby potatoes, quartered (or russet, diced)
1 lb smoked sausage, sliced
2 tablespoons olive oil
1 packet (1 oz) ranch seasoning mix
1 teaspoon garlic powder
½ teaspoon paprika
½ teaspoon black pepper
1½ cups shredded cheddar cheese
¼ cup chopped parsley (optional for garnish)
Instructions
1. Preheat oven to 400°F (200°C) and grease a large baking dish or sheet pan.
2. In a large bowl, toss potatoes with olive oil, ranch seasoning, garlic powder, paprika, and black pepper.
3. Spread the seasoned potatoes evenly in the prepared dish.
4. Top with sliced smoked sausage.
5. Bake for 35–40 minutes, stirring once halfway through, until potatoes are golden and fork-tender.
6. Sprinkle shredded cheddar cheese evenly on top.
7. Return to oven for 5–7 minutes until the cheese is melted and bubbly.
8. Garnish with chopped parsley if using, and serve warm.
Notes
Cut potatoes evenly so they cook at the same rate.
Stir halfway through baking for crispier edges.
Add bell peppers, broccoli, or zucchini for more veggies.
Sweet potatoes add a natural touch of sweetness.
For spice, add cayenne or red pepper flakes.
Leftovers reheat well in the oven or microwave.
