Ingredients
2½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
4 large eggs
2 cups granulated sugar
1 cup unsalted butter, softened
4 teaspoons almond extract
1 cup sour cream
1¼ cups butter, softened (for frosting)
5 cups powdered sugar
â…“ cup heavy whipping cream
¼ cup maraschino cherry juice
3 teaspoons vanilla extract
8–10 maraschino cherries, chopped
Instructions
1. Preheat oven to 350°F and grease two 9-inch round cake pans.
2. In a bowl combine flour, baking soda, baking powder, and salt.
3. In a large mixing bowl beat eggs and sugar with an electric mixer for about 2 minutes until pale and creamy.
4. Add softened butter and almond extract and mix until blended.
5. Gradually add the dry ingredients and mix on low speed just until combined. Do not overmix.
6. Add sour cream and mix until the batter becomes smooth and thick.
7. Divide batter evenly between the prepared cake pans.
8. Bake for 23 to 25 minutes or until a toothpick inserted in the center comes out clean.
9. Allow the cakes to cool completely in the pans on a wire rack.
10. For the frosting beat softened butter until smooth and creamy.
11. Add powdered sugar, heavy whipping cream, vanilla extract, cherry juice, and chopped cherries.
12. Beat on high speed for about 3 minutes until the frosting becomes fluffy and spreadable.
13. Spread frosting over the cooled cake layers and assemble the cake.
Notes
Do not overmix the batter once the dry ingredients are added or the cake may become dense.
Mix just until the ingredients combine even if small traces of flour remain.
Heavy whipping cream produces a thicker and creamier frosting than milk.
Make sure the oven is fully preheated before baking for the best cake texture.
Allow the cake layers to cool completely before adding frosting to prevent melting.
