Description

Cherry chocolate chip blondies are soft, chewy dessert bars made with buttery brown sugar batter, rich chocolate chips, and juicy sweet cherries. ½ cup (113.5 g) butter, melted and cooled

1 cup (220 g) brown sugar

1 teaspoon vanilla extract

1 large egg, room temperature

1¼ cups (175 g) all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

¾ cup (135 g) dark chocolate chips

1 cup (138 g) fresh sweet cherries, pitted (about 18 cherries)


Instructions

1. Preheat oven to 350°F (175°C) and prepare an 8×8-inch baking pan with parchment paper and nonstick spray.

2. Mix melted butter and brown sugar together in a bowl until well combined.

3. Add the egg and vanilla extract and stir until fully incorporated.

4. Add flour, baking powder, and salt and mix until a thick batter forms.

5. Fold in chocolate chips and pitted cherries evenly throughout the batter.

6. Spread the batter into the prepared baking pan and smooth the top so it bakes evenly.

7. Bake until the bars are set and lightly golden around the edges, about 30 minutes.

8. Allow the blondies to cool before slicing into squares.

Notes

Frozen cherries can be used instead of fresh. Thaw them first and remove excess liquid to prevent soggy batter.

Any type of chocolate chips or chopped chocolate can replace dark chocolate chips.

Optional add-ins such as chopped walnuts or pecans can be mixed into the batter for extra texture.

Store blondies in the refrigerator because the cherries soften over time.

Blondies can also be frozen for several months for longer storage.
