Description

Soft and chewy Cherry Chocolate Chip Cookies packed with rich chocolate chips and sweet tart cherries. These cookies bake quickly and create lightly crisp edges with tender centers. The recipe takes about 30 minutes from start to finish and makes about 16 cookies.


Ingredients

1/2 cup unsalted butter, softened

3/4 cup brown sugar

1/4 cup cane sugar (granulated sugar)

1 egg

1 teaspoon vanilla extract

1 1/3 cups plus 2 tablespoons all purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup chocolate chips

1/2 cup cherries, pitted and chopped


Instructions

1. Preheat oven to 350°F and line a baking sheet with parchment paper.

2. Pit and roughly chop the cherries, then set them aside.

3. Beat softened butter with brown sugar and granulated sugar in a large bowl until smooth and creamy.

4. Add the egg and vanilla extract and mix until fully combined.

5. In a separate bowl whisk together flour, baking soda, baking powder, and salt.

6. Gradually mix the dry ingredients into the wet mixture until a cookie dough forms.

7. Gently fold chocolate chips and chopped cherries into the dough.

8. Scoop portions of dough onto the prepared baking sheet leaving space between cookies.

9. Bake for about 12 minutes or until edges look lightly golden.

10. Allow cookies to cool on the baking sheet for a few minutes then transfer to a rack to cool completely.

Notes

Fresh cherries give a lighter fruit flavor while maraschino cherries create a stronger cherry taste.

If using salted butter reduce or omit the added salt.

For an egg free option use a flax egg made with 1 tablespoon ground flaxseed and 2.5 tablespoons water.

Gluten free 1:1 baking flour can replace all purpose flour.

Vegan butter can replace regular butter for a dairy free option.

Store cookies in an airtight container at room temperature for up to 3 days.
