Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease each cup thoroughly to prevent sticking.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar until evenly combined.
- In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and fold gently until just combined. Carefully fold in the cherries.
- In a small bowl, mix the brown sugar, flour, and cinnamon. Add the softened butter and cut it in using a fork or your fingers until the mixture resembles coarse crumbs.
- Spoon the batter into the muffin cups, filling each about ¾ full. Top each with a generous pinch of streusel topping. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
If using frozen cherries, do not thaw—fold them in directly to maintain a moist muffin texture. To pit cherries quickly, use a cherry pitter or press them through a metal straw.
