  • For the Streusel Topping:

  • 3 tbsp unsalted butter, softened

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease each cup thoroughly to prevent sticking.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar until evenly combined.
  3. In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined. Carefully fold in the cherries.
  5. In a small bowl, mix the brown sugar, flour, and cinnamon. Add the softened butter and cut it in using a fork or your fingers until the mixture resembles coarse crumbs.
  6. Spoon the batter into the muffin cups, filling each about ¾ full. Top each with a generous pinch of streusel topping. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.

Notes

If using frozen cherries, do not thaw—fold them in directly to maintain a moist muffin texture. To pit cherries quickly, use a cherry pitter or press them through a metal straw.
