Ingredients
1 3/4 cups plain white flour
3/4 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cold butter
1 egg, beaten
2 tablespoons milk
2 1/4 cups fresh cherries, pitted
3 tablespoons sugar (for filling)
2 tablespoons cornflour
Instructions
1. Preheat oven to 375°F and line a square baking pan with parchment paper, then grease lightly
2. Mix flour, sugar, baking powder, and salt in a bowl, then grate in cold butter and mix until crumbly
3. Add egg and milk, then mix until a soft dough forms
4. Press two thirds of the dough into the pan to form the base
5. Mash cherries slightly, drain excess liquid, then mix with sugar and cornflour
6. Spread cherry filling over the base evenly
7. Crumble remaining dough over the top
8. Bake for 32 to 36 minutes until lightly golden
9. Cool completely for 2 to 3 hours before slicing
Notes
Use cold butter for a crumbly texture
Do not overmix the dough to keep bars tender
Drain cherries well to prevent soggy bars
Allow full cooling time for clean slices
You can use frozen cherries if thawed and drained
Add vanilla or almond extract for extra flavor
