Description
Cherry Crumble Pie combines a flaky homemade pie crust with a sweet cherry filling and a buttery oat crumble topping. The cherries bake into a thick jam like filling while the golden crumble adds crisp texture. Ingredients
1 ¼ cups all purpose flour
2 teaspoons granulated sugar
¼ teaspoon salt
½ cup cold unsalted butter cut into cubes
4 tablespoons ice cold water
6 cups sweet cherries pitted and halved
⅔ cup granulated sugar
3 tablespoons cornstarch
1 tablespoon lemon juice
½ teaspoon almond extract or 1 teaspoon vanilla extract
¼ teaspoon salt
½ cup all purpose flour
½ cup old fashioned oats
⅓ cup packed brown sugar
¼ teaspoon salt
¼ cup cold unsalted butter cut into pieces
Instructions
1. Prepare the pie crust by mixing flour sugar and salt then cut in cold butter until crumbly. Add ice water gradually and form dough then roll out and place in pie dish.
2. Set the crust aside while preparing the filling.
3. Mix cherries sugar cornstarch lemon juice salt and almond extract until evenly coated.
4. Pour the cherry filling and juices into the pie crust.
5. Combine flour oats brown sugar and salt for the crumble topping then work in butter until crumbly.
6. Sprinkle crumble topping evenly over the cherry filling.
7. Bake until topping is golden and filling bubbles.
8. If topping browns too fast loosely cover with foil.
9. Allow pie to cool several hours before slicing.
Notes
Fresh sweet cherries give the best flavor but tart cherries also work with extra sugar.
A cherry pitter helps remove pits quickly.
Almond extract deepens cherry flavor but vanilla works well too.
If crust or topping browns quickly tent the pie with foil.
Let the pie rest at least three hours before slicing.
Frozen cherries may be used if thawed and drained.
