These Cherry Pie Crumb Bars are buttery, fruity, and perfect for summer—bringing all the flavor of cherry pie without the fuss of a crust.
Ingredients
½ cup unsalted butter, melted and cooled
½ cup granulated sugar
1½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
2 cups fresh cherries, pitted and halved
1 tablespoon cornstarch
1 tablespoon lemon juice
1 teaspoon granulated sugar (for topping)
Instructions
1. Preheat oven to 375°F (190°C). Line an 8×8-inch baking pan with parchment and butter it.
2. Mix cherries with cornstarch and lemon juice. Set aside.
3. In a separate bowl, mix melted butter with ½ cup sugar.
4. Stir in flour, baking soda, baking powder, and salt using a fork until crumbly.
5. Reserve ¾ cup of the mixture. Press the rest into the pan as a crust.
6. Spread cherry mixture evenly over the base.
7. Sprinkle reserved crumbs and 1 tsp sugar over the top.
8. Bake for 23–25 minutes until golden brown and bubbly.
9. Cool completely before cutting into bars.
Notes
Use room-temp melted butter for best crumb texture.
You can substitute frozen cherries—just thaw and drain first.
Double the recipe for a 9×13 pan (bake 35–40 min).
Swap in peaches, blueberries, or apricots if preferred.
To freeze: wrap cooled bars tightly and freeze up to 3 months.
