Description

Cherry Walnut Couscous Salad is a fresh and vibrant dish with sweet cherries, crunchy walnuts, creamy feta, and citrus dressing. It works perfectly for light meals, picnics, or as a flavorful side.


Ingredients

3 tablespoons extra virgin olive oil

1½ cups Israeli couscous

2 cups fresh cherries, pitted and halved

1 cup black olives, pitted

½ cup walnuts, toasted and roughly chopped

1 cup feta cheese, crumbled

4 tablespoons fresh lemon juice

2 tablespoons fresh thyme leaves

Salt and freshly ground black pepper to taste

½ cup fresh parsley, chopped


Instructions

1. Cook couscous in a saucepan according to package directions until tender then allow it to cool

2. Transfer cooled couscous to a large bowl and fluff to separate grains

3. Add cherries olives toasted walnuts feta parsley and thyme

4. In a small bowl mix olive oil lemon juice salt and pepper

5. Pour dressing over salad and toss gently until evenly coated

6. Adjust seasoning and serve chilled or at room temperature

Notes

Toast walnuts lightly for better flavor and crunch

Cool couscous before mixing to prevent cheese from melting
