Description
Chicken Fried Chicken is a classic American comfort dish made with thin chicken breasts coated in seasoned flour, fried until crispy and golden, and served with creamy country gravy. This hearty dinner is quick to prepare and perfect with mashed potatoes, biscuits, or vegetables.
Ingredients
6–8 thin sliced chicken breasts
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1½ cups buttermilk
1 egg
1 tablespoon hot sauce
Oil for frying
¼ cup reserved frying oil for gravy
⅓ cup flour for gravy
2 cups milk for gravy
Salt and pepper for gravy
Instructions
1. Heat several inches of oil in a deep fryer or large skillet to about 325°F.
2. Combine flour, baking powder, baking soda, salt, pepper, and garlic powder in a shallow bowl.
3. In another bowl whisk buttermilk, egg, and hot sauce until fully blended.
4. Coat each chicken breast in the seasoned flour mixture, ensuring all sides are covered and pressing lightly so the coating sticks.
5. Dip the floured chicken into the buttermilk mixture so the coating becomes wet.
6. Return the chicken to the flour mixture and coat again to create a thick breaded layer.
7. Carefully place the coated chicken in the hot oil and fry for about 3–5 minutes per side until golden brown and cooked through.
8. Transfer the cooked chicken to a paper towel lined plate to drain excess oil and repeat with remaining pieces.
9. Heat about ¼ cup of the frying oil in a skillet over medium heat.
10. Whisk in flour and cook briefly for about one minute to form a roux.
11. Slowly pour in the milk while whisking continuously until smooth and thickened.
12. Season gravy with salt and pepper to taste and serve over the fried chicken.
Notes
A deep fryer or a skillet with several inches of oil can both be used for frying the chicken.
Butter or bacon grease can replace the frying oil when making the gravy if preferred.
Thin sliced chicken breasts work best, but regular chicken breasts can be cut in half lengthwise to create thinner pieces.
Seasoning levels in both the breading and gravy can be adjusted to personal taste.
