Description

Chicken Gnocchi Soup is a creamy one pot comfort soup filled with shredded chicken, pillowy potato gnocchi, fresh vegetables, and spinach simmered in a rich herb flavored broth inspired by the famous Olive Garden favorite.


Ingredients

1 small yellow onion, diced

1 cup sliced celery

1 cup matchstick carrots

6 cloves garlic, minced

2 teaspoons Italian seasoning

1/2 teaspoon rubbed sage

1/4 cup all purpose flour

4 cups chicken broth

1 1/2 cups heavy cream

1 pound potato gnocchi

2 cups shredded rotisserie chicken

1 1/2 cups chopped fresh spinach

1 teaspoon balsamic vinegar

Kosher salt

Fresh cracked black pepper


Instructions

1. Melt butter in a large pot over medium heat. Add diced onion, celery, and carrots with a pinch of salt and pepper. Cook about 8 minutes until vegetables soften.

2. Stir in garlic, Italian seasoning, and sage. Cook briefly until fragrant.

3. Sprinkle flour over the vegetables and stir constantly for about one minute to create a roux.

4. Add a small splash of chicken broth and scrape the bottom of the pot to loosen browned bits.

5. Pour in the remaining chicken broth and heavy cream. Stir well and season lightly with salt and pepper.

6. Bring the mixture to a gentle simmer.

7. Add potato gnocchi and shredded chicken. Simmer for 3 to 5 minutes until gnocchi are tender.

8. Stir in chopped spinach and balsamic vinegar. Cook just until spinach wilts.

9. Taste the soup and adjust salt and pepper before serving. Garnish with chopped parsley if desired.

Notes

Cook the gnocchi only until tender. Overcooking can make them soft or gummy.

Season the soup gradually during cooking to build balanced flavor.
