Ingredients
3 large chicken breasts
4 cups water
1 tablespoon salt
3 slices ginger
2 scallions (cut into 2-inch pieces)
1 1/2 tablespoons sesame seeds
3 cloves garlic (minced)
2 medium red finger hot peppers
2 tablespoons red chili flakes
3 tablespoons oil
1 tablespoon Chinkiang vinegar
3 tablespoons soy sauce
1 medium carrot (julienned)
1/2 medium cucumber (julienned)
1/3 cup cilantro
3 tablespoons toasted peanuts
Instructions
1. Slice chicken breasts lengthwise and crosswise; whisk water and salt, then brine chicken for 30 minutes and drain.
2. Boil water, reduce to lowest heat, add chicken, ginger, scallions; poach 15 minutes until 165°F (74°C); cool and shred chicken.
3. Combine sesame seeds, garlic, peppers, chili flakes in heatproof bowl; heat oil until smoking and pour over mixture; add vinegar and soy sauce; mix well.
4. In large bowl, toss shredded chicken, carrot, cucumber, cilantro, peanuts, and dressing until evenly coated.
Notes
Slice chicken smaller to reduce brining and cooking time.
30-minute brine ensures juicy, tender chicken.
Poach gently to maintain tender texture.
Ensure chicken reaches 165°F for food safety.
Adjust chili flakes or omit for a milder version.
Hot oil enhances aroma but is optional.
