Chocolate Covered Cherry Brownie Bombs are rich bite sized desserts made from soft brownie crumbs mixed with frosting, filled with sweet cherries, and coated in smooth melted chocolate. These indulgent treats combine deep chocolate flavor with a bright cherry center, making them perfect for parties, holidays, and dessert platters.

1 box brownie mix plus the ingredients required on the box

3/4 cup chocolate frosting

15 oz almond bark, melted according to package instructions

1 can cherry pie filling or maraschino cherries


Instructions

1. Bake the brownies following the package directions and allow them to cool completely while keeping them soft rather than overbaked.

2. Crumble the cooled brownies into a bowl and mix in about 3/4 cup chocolate frosting until the mixture holds together easily but is not overly sticky. Add a little more frosting if needed.

3. Scoop about 1 1/2 tablespoons of the brownie mixture and shape it into a ball, then press a small indentation in the center.

4. Place one cherry from the pie filling or one maraschino cherry into the center and seal it inside by folding the brownie mixture around it.

5. Repeat until all brownie balls are formed.

6. Place the brownie balls in the freezer for about 20 minutes so they firm up.

7. While they chill, melt the almond bark according to the package instructions until smooth.

8. Remove the brownie balls from the freezer and keep them refrigerated while working.

9. Dip each brownie ball into the melted almond bark and lift it out, gently tapping off the excess coating.

10. Place the coated brownie bombs on wax paper and allow the chocolate coating to fully set before serving.

Notes

Cherry pie filling or maraschino cherries can be used as the center filling.

Maraschino cherries are easier to assemble but may release some liquid after sealing.

Brownies should remain soft rather than crunchy so the mixture forms smooth balls.

Chilling the brownie balls before dipping helps them keep their shape during coating.

If freezing for longer storage, freeze the brownie bombs in a single layer for about one hour, then store them in an airtight container with paper towels between layers to absorb moisture.
