Description
Chocolate-Covered Strawberry Brownies combine ultra fudgy chocolate brownies with fresh strawberries and a smooth chocolate drizzle on top. This rich yet fresh dessert makes the perfect romantic treat, holiday dessert, or special weekend bake.
Ingredients
Cooking spray
2 large eggs
1/4 cup vegetable oil
4 tablespoons unsalted butter, melted
2 tablespoons water
1 teaspoon vanilla extract
1 1/4 cups granulated sugar
3/4 cup all purpose flour
2/3 cup unsweetened cocoa powder
1/2 cup confectioners sugar
1/2 teaspoon kosher salt
1/2 cup chocolate chips or chocolate chunks
3 cups strawberries, hulled
Chocolate melting wafers for drizzling
Instructions
1. Heat oven to 325°F.
2. Line an 8 inch square pan with parchment paper and lightly coat with cooking spray.
3. Whisk eggs, vegetable oil, melted butter, water, and vanilla until smooth.
4. In a separate bowl, combine granulated sugar, flour, cocoa powder, confectioners sugar, and salt.
5. Stir dry ingredients into wet ingredients just until combined.
6. Fold in chocolate chips or chunks and spread batter evenly in prepared pan.
7. Bake 35 to 40 minutes until center is set and a tester comes out clean.
8. Cool brownies completely in the pan.
9. Arrange hulled strawberries cut side down over cooled brownies.
10. Melt chocolate wafers until smooth and drizzle over strawberries.
11. Allow chocolate to set fully, then lift brownies from pan and slice into 12 servings.
Notes
Cool brownies fully before adding strawberries so fruit stays fresh.
You may melt chocolate chips instead of wafers for the drizzle.
Refrigerate leftovers up to 2 days because of fresh strawberries.
Chill briefly before slicing for clean edges.
