Description

Rich, fudgy Chocolate Covered Strawberry Brownies with juicy strawberries and silky ganache a perfect Valentine’s Day dessert that looks fancy but feels easy.


Ingredients

1 cup (2 sticks) unsalted butter

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

1/2 teaspoon salt

1 teaspoon baking powder

1 pint fresh strawberries, hulled and halved

1 cup semi-sweet chocolate chips

1/2 cup heavy cream


Instructions

1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving extra on the sides for easy removal.

2. Melt butter in a large microwave-safe bowl. Whisk in sugar until combined. Add eggs and vanilla extract, mixing until smooth.

3. In a separate bowl, sift flour, cocoa powder, salt, and baking powder. Add dry mix to wet ingredients and stir just until combined.

4. Pour batter into the pan and spread evenly. Bake for 25–30 minutes, or until a toothpick inserted comes out with a few moist crumbs. Let cool completely.

5. Evenly place halved strawberries over the cooled brownie layer.

6. In a microwave-safe bowl, combine chocolate chips and heavy cream. Heat in 30-second intervals, stirring each time, until smooth and melted.

7. Pour ganache over the strawberries and spread evenly to cover.

8. Refrigerate for at least 1 hour to set. Lift brownies out using parchment, then slice into squares.

Notes

Ganache should be fully set before cutting to maintain clean slices.

Brownies must be completely cool before adding strawberries and ganache.

Can be made ahead and stored in the fridge.

Optional: skip strawberries for a pure chocolate version.
