- 1 cup semi-sweet chocolate chips (divided)
- 2 large eggs
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 1/4 cups grated zucchini (squeeze out some water)
- 2 tsp vanilla extract
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- Melt 1/2 cup of chocolate chips gently in a microwave or double boiler.
- In a large bowl, whisk together eggs, sugar, vegetable oil, grated zucchini, vanilla extract, and melted chocolate.
- In a separate bowl, whisk together all-purpose flour, cocoa powder, baking soda, salt, and cinnamon.
- Gently fold the dry mix into the wet ingredients until just combined. Stir in the remaining 1/2 cup of chocolate chips.
- Pour the batter into the prepared pan. Bake for 55–60 minutes, or until a toothpick inserted in the center comes out mostly clean (a little melted chocolate is okay!).
Notes
Don’t peel the zucchini—the skin helps keep the bread moist. Gently squeeze the grated zucchini to avoid a soggy loaf. Use good cocoa powder for that rich chocolate hit.
