Description

These Christmas Cookie Bars are buttery, soft, and topped with creamy buttercream frosting and festive sprinkles. They taste just like classic sugar cookies but bake in one pan — perfect for parties, cookie swaps, or cozy nights in.

Ingredients

Scale

3/4 cup sugar

1/4 cup powdered sugar

3/4 cup butter, softened

2 teaspoons vanilla extract

2 large eggs

1 teaspoon baking powder

1/2 teaspoon salt

2 1/4 cups all-purpose flour

3 tablespoons red and green jimmy sprinkles

Frosting:

2 1/4 cups powdered sugar

1/2 cup + 2 tablespoons unsalted butter, softened

34 tablespoons heavy cream or milk

1/8 teaspoon salt

1 1/2 teaspoons vanilla extract

Extra sprinkles for topping

Instructions

1. Preheat oven to 375°F and grease a 9×13-inch pan.

2. Beat sugar, powdered sugar, and butter until light and fluffy.

3. Mix in vanilla and eggs until smooth.

4. Add baking powder and salt, then gradually stir in flour until fully combined.

5. Fold in sprinkles and press dough evenly into the prepared pan.

6. Bake for 12–14 minutes or until lightly golden around the edges.

7. Let cool completely.

8. For frosting, beat butter until creamy, then gradually add powdered sugar.

9. Add vanilla, salt, and cream or milk, mixing until smooth and spreadable.

10. Spread frosting on cooled bars, top with sprinkles, and cut into 24 squares.

11. Chill briefly before slicing for clean edges.

Notes

For sharp, clean cuts, chill the pan in the freezer for 5 minutes before slicing.

Store bars in an airtight container at room temperature up to 3 days or in the fridge up to 5 days.

Freeze unfrosted bars for up to 1 month; thaw before frosting.

Try a “Grinch” version with green frosting and red heart sprinkles.
