Description
These easy Christmas Cookies are buttery vanilla biscuits you can roll, cut, bake, and decorate — no chilling needed! Soft or crisp, they’re sweet enough to enjoy plain or dressed up for the holiday table.
Ingredients
1 cup (225g) unsalted butter, softened
1 cup caster or granulated sugar
1½ tsp vanilla extract
1 large egg (55–60g)
3 cups all-purpose flour
¾ tsp baking powder
¾ tsp salt
Instructions
1. Preheat oven to 350°F (180°C). Line two baking sheets with parchment paper.
2. Beat butter and sugar until creamy, about 1 minute.
3. Add egg and vanilla; beat until combined.
4. Add flour, baking powder, and salt. Mix until a clumpy dough forms.
5. Lightly flour surface. Divide dough in half, shape into discs.
6. Roll out to 1/8” for crispy or 1/4” for soft cookies.
7. Cut shapes with cookie cutters. Transfer to baking trays.
8. Bake 10 minutes, swapping tray positions halfway through.
9. Cool on trays completely before decorating.
Notes
No chill time needed — dough is ready to roll immediately.
Dough is forgiving and can be re-rolled multiple times.
Yields about 40 cookies depending on size and thickness.
Store in an airtight container for up to 1 week.
