Description

Cinco de Mayo Churro Bars bring the classic cinnamon sugar flavor of traditional churros into an easy baked dessert. These buttery bars bake in a single pan and develop a soft center with a lightly crisp cinnamon sugar topping. They are perfect for parties, family gatherings, or a festive Cinco de Mayo dessert table.


Ingredients

1 cup butter, softened

1 cup granulated sugar

1 cup packed brown sugar

2 eggs

1 1/2 teaspoons vanilla extract

2 1/4 cups all purpose flour

1/2 teaspoon salt

1 teaspoon baking powder

1 1/2 teaspoons ground cinnamon

1/4 cup granulated sugar for topping

1 1/2 teaspoons ground cinnamon for topping


Instructions

1. Preheat the oven to 350°F and grease a 9×13 inch baking pan with nonstick spray.

2. Beat the softened butter with granulated sugar and brown sugar until creamy and well combined.

3. Add the eggs and vanilla extract and mix until fully incorporated.

4. Add flour, salt, baking powder, and cinnamon and mix just until a thick dough forms.

5. Transfer the dough to the prepared pan and press it evenly across the bottom to create a flat layer.

6. In a small bowl mix the topping sugar and cinnamon then sprinkle evenly over the dough.

7. Bake for 25 to 30 minutes until the bars are lightly golden and the center is set.

8. Allow the bars to cool for about 30 minutes before slicing into squares.

Notes

Store leftover churro bars in an airtight container at room temperature for up to 4 days.

Bars can be frozen for up to 3 months.

Allow bars to cool before slicing so they hold their shape.

Serve warm or at room temperature with ice cream, caramel sauce, or chocolate drizzle.
