Ingredients
2 1/2 cups all purpose flour
1 tsp baking powder
1 tsp cornstarch
1/2 tsp salt
3/4 cup unsalted butter softened
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 tsp vanilla extract
1 tsp ground cinnamon
Cinnamon Filling
3 tbsp softened butter
1/3 cup brown sugar
2 tbsp all purpose flour
1 1/2 tsp ground cinnamon
Pinch of salt
Optional Vanilla Glaze
1 cup powdered sugar
1/2 tsp vanilla extract
2 to 3 tbsp milk or cream
Instructions
1. Preheat oven to 350°F and line baking sheets with parchment paper.
2. Mix softened butter, brown sugar, flour, cinnamon, and a pinch of salt to create the cinnamon filling. Place it in the freezer briefly to firm up.
3. In a bowl whisk together flour, baking powder, cornstarch, and salt.
4. In another bowl beat softened butter with granulated sugar and brown sugar until creamy and fluffy.
5. Add eggs and vanilla extract and mix until fully combined.
6. Gradually add the dry ingredients into the butter mixture and mix until a soft dough forms.
7. Flatten portions of cookie dough and add small pieces of chilled cinnamon filling.
8. Fold or swirl the dough gently so the cinnamon mixture runs through the cookie dough.
9. Scoop dough into balls and place them on the prepared baking sheet leaving space between cookies.
10. Bake for 10 to 12 minutes until edges are lightly golden while centers remain soft.
11. Allow cookies to cool on the baking sheet for several minutes then transfer to a rack to cool completely.
12. If desired mix powdered sugar, vanilla, and milk to create glaze and drizzle over cooled cookies.
Notes
Chilling the cinnamon filling helps it stay in pockets and prevents it from melting into the dough.
Avoid overmixing the dough to keep the cookies soft and tender.
For stronger cinnamon flavor increase the cinnamon slightly in the filling.
Adjust glaze thickness by adding more or less milk.
Cookies should appear slightly underbaked in the center when removed from the oven to keep them soft.
