Description
Easy and satisfying Copycat Taco Bell Mexican Pizzas made at home with crispy tortillas, refried beans, cheese, sauce, and fresh toppings. Perfect for weeknight dinners.
Ingredients
1 cup refried beans
2 small tomatoes, chopped
2/3 cup Colby Jack shredded cheese
2 stalks green onions, chopped
1/3 cup red enchilada sauce
4 whole wheat tortillas (recommend La Banderita Xtreme or Ole Xtreme)
Cooking spray
Instructions
1. Preheat oven to 400°F.
2. Grease hot skillet or griddle with cooking spray.
3. Fry tortillas until crispy, flipping frequently, then set aside.
4. Heat refried beans until warm.
5. Place 2 tortillas on baking sheet.
6. Spread 1/2 cup refried beans on each tortilla.
7. Top each with another tortilla.
8. Spread half of enchilada sauce on each tortilla stack.
9. Top with half of chopped tomatoes, 1/3 cup cheese, and half of green onions.
10. Bake for 8–10 minutes, until cheese is melted.
11. Let cool briefly, slice into quarters, and serve.

Makes 2 pizzas, 1 pizza per serving.

Optional add-ins: browned ground beef or turkey.
