1½ cups vegetable oil for frying

2 cups buttermilk

2 large eggs, whisked

3 teaspoons salt

1½ cups all purpose flour

½ cup breadcrumbs (plain or Italian)

2½ teaspoons seasoned salt

¾ teaspoon paprika

½ teaspoon cayenne pepper

1½ teaspoons black pepper


Instructions

1. Place each chicken breast between plastic wrap and pound with a meat tenderizer until about ½ inch thick.

2. Pat the chicken dry and mix buttermilk, whisked eggs, and salt in a bowl. Submerge the chicken and refrigerate for 1 to 2 hours or overnight.

3. Remove the chicken from the refrigerator and allow it to sit at room temperature for about 25 to 30 minutes.

4. Combine flour, breadcrumbs, seasoned salt, paprika, cayenne pepper, and black pepper to create the breading mixture.

5. Coat each piece of marinated chicken in the breading just before frying. Press the mixture firmly so it adheres well.

6. Heat vegetable oil in a skillet to about 350°F so the chicken will fry evenly.

7. Fry the chicken for about 4 to 5 minutes per side until golden brown and crispy.

8. Transfer the cooked chicken to a wire rack so excess oil drains and the crust stays crisp.

9. Repeat with remaining chicken pieces and serve hot.
