Ingredients
1 cup whole milk cottage cheese
1 cup finely grated Parmesan cheese
2 large eggs
Kosher salt
Freshly ground black pepper
1 pound orzo pasta
4 cups vegetable or chicken broth
Instructions
1. Blend cottage cheese, Parmesan, eggs, salt, and pepper until completely smooth.
2. In a medium pot, add orzo and broth, then bring to a medium-high heat.
3. Cook the orzo while stirring frequently until the liquid is absorbed and the pasta is tender, about 12–15 minutes.
4. Remove from heat and stir in the blended cheese mixture until creamy and well combined.
5. Taste and adjust with more salt and pepper if necessary before serving.
Notes
Use whole milk cottage cheese for a richer, creamier result.
Stir orzo regularly while cooking to prevent sticking.
Keep a little broth aside in case the sauce needs thinning.
