Description

Crispy Air Fryer Potatoes come out golden and crisp on the outside, while staying fluffy and tender inside. Baby red potatoes, parmesan, smoked paprika, and a quick blast of heat make this easy side dish perfect for weeknight dinners or holiday meals.


Ingredients

1 lb baby red potatoes, washed and halved

1 tbsp extra-virgin olive oil

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp Italian seasoning

1 tsp smoked paprika

1/4 cup grated parmesan cheese

Kosher salt, to taste

Freshly ground black pepper, to taste

Fresh parsley, for garnish

Lemon juice, for serving


Instructions

1. Wash and halve the baby red potatoes.

2. If you want extra crispiness, soak the cut potatoes in cold water for 45 to 60 minutes, then drain and dry them very well.

3. In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, Italian seasoning, smoked paprika, parmesan cheese, kosher salt, and black pepper until evenly coated.

4. Preheat the air fryer to 400°F for about 5 minutes if desired.

5. Arrange the potatoes in a single layer in the air fryer basket, working in batches if needed.

6. Air fry for 10 minutes.

7. Shake the basket or stir the potatoes.

8. Cook for 8 to 10 minutes more, until the potatoes are browned and crisp outside and tender inside.

9. Finish with fresh parsley and a squeeze of lemon juice before serving.

Notes

For extra crispiness, soak the cut potatoes in cold water for 45 to 60 minutes before cooking to remove excess starch.

A little lemon juice can be added to the soaking water to help prevent browning.

Do not overcrowd the basket or the potatoes may cook unevenly. Keep them in a single layer and cook in batches if necessary.

Shake the basket partway through so the pieces brown more evenly.

Preheating the air fryer for about 5 minutes can shorten cook time.

There is no need to boil the potatoes first.

If they are not crisp enough at the end, finish them briefly under the broiler.

Let leftovers cool before refrigerating or freezing.

Reheat in the air fryer or under the broiler for the best crisp texture. The microwave will warm them but soften them.

Baby red potatoes are preferred because their small size works well in the air fryer and they stay crisp outside while soft inside.

Other potato options include gold, Yukon gold, white, yellow, baby, or tri-color potatoes. Cut larger potatoes into smaller pieces.

Extra-virgin olive oil is preferred, but avocado, sesame, canola, or vegetable oil can also be used.

Seasoning can be changed with ranch seasoning, Cajun seasoning, taco seasoning, chili powder, or other spices such as cumin, cilantro, ginger, nutmeg, or turmeric.

For a spicy version, add red pepper flakes or cayenne.

Store uncooked potatoes in a cool, dry place.

Refrigerate leftovers in an airtight container for several days.

Freeze leftovers in freezer bags for up to 3 months.

Thaw frozen potatoes overnight in the refrigerator.
